Stovetop Macaroni and Cheese

Serves 6-8

 

Ingredients

  1. 1 lb short tubular pasta like elbow or gemelli

  2. 3 Tbsp butter

  3. 3-4 Tbsp flour

  4. 2 cups whole milk

  5. 4 oz American cheese

  6. 4 oz shredded mild cheddar

  7. 3 Tbsp grated parmigiano cheese

  8. Salt and pepper

 

Instructions

  1. Boil pasta in very salty water until slightly undercooked

  2. Drain and reserve ½ cup of pasta water

  3. In same pan, melt butter until it is sizzling

  4. Slowly add in flour whisking constantly.  Cook for a few minutes.

  5. Add milk in ¼ cup intervals whisking the whole time.

  6. Sauce should begin to thicken.

  7. Add cheese a handful at a time and stir until completely melted.

  8. Stir in cooked macaroni

  9. Add any toppings that you like

 

Add-ins

  • Chopped cooked chicken

  • Crumbled bacon

  • Steamed broccoli

  • Roasted peppers

  • Toasted, buttered panko bread crumbs

  • Cooked hot dogs
