Stovetop Macaroni and Cheese
Serves 6-8
Ingredients

1 lb short tubular pasta like elbow or gemelli

3 Tbsp butter

3-4 Tbsp flour
-
2 cups whole milk

4 oz American cheese
-
4 oz shredded mild cheddar

3 Tbsp grated parmigiano cheese

Salt and pepper
Instructions

Boil pasta in very salty water until slightly undercooked

Drain and reserve ½ cup of pasta water

In same pan, melt butter until it is sizzling
-
Slowly add in flour whisking constantly. Cook for a few minutes.

Add milk in ¼ cup intervals whisking the whole time.

Sauce should begin to thicken.

Add cheese a handful at a time and stir until completely melted.

Stir in cooked macaroni

Add any toppings that you like
